- 1 teaspoon red pepper flakes
- juice of just one lemon
- handful of basil, chopped
- sea salt and freshly ground black pepper
- Cook the pasta according to the packet instructions.
- Meanwhile, heat the oil in the large saucepan spanning a medium-high heat and saut the onion and garlic for 3 minutes. Add some courgette, aubergine and olives and cook for yet another minute.
- Mix in the tinned tomatoes, tomato pure, cumin, sweet paprika, capsicum pepper, chili powder, red pepper flakes and lemon juice and season with pepper and salt.
- Reduce high temperatures to medium, cover the pan and cook for one more 10C12 minutes, stirring every little while, prior to the veggies are tender.
- Remove from heat and mix the sauce in to the drained cooked pasta. Garnish while using the chopped basil.
